I know you guys have been patiently waiting for this!  Here is the recipe for my Vanilla Protein Cupcakes 🙂
 Vanilla Protein Cupcakes (makes 12 Cupcakes)
Ingredients
3/4 Cup coconut flour
1 scoop vanilla whey protein
1 Tsp baking soda
1/4 Tsp salt
3 Eggs
6oz. Plain Greek Yogurt
2 packets of Stevia
1 Tsp Vanilla Extract
Frosting Ingredients
1 stick of butter (room temperature)
1.5 Cups confectioners sugar
1 Tsp Vanilla Extract
Preheat Oven to 350 degrees
Combine dry ingredients; flour, baking soda, salt, stevia packets and protein powder in a medium mixing bowl. Lightly fluff with a fork to combine.
In a small mixing bowl, combine your eggs, Greek yogurt and vanilla extract.
Add the wet mixture to the dry mixture stirring gradually until fully combined with no lumps. You can use a whisk or mixture if you prefer.
Line a cupcake pan with cupcake papers
Scoop the batter into the cupcake papers (in the pan).
Place in over (middle to lower rack) and back for 20-25min until fully cooked. Test with a toothpick. Should come out clean.Â
Removed from pan onto a cooling rack and let cool.
To make the frosting:
In a mixing bowl, put butter and vanilla extract and beat on low until smooth. Slowly add in powdered sugar, about half a cup at a time and mix fully. Frosting should appear thick and fluffy.Â
Frost the cupcakes once cooled and enjoy!Â
Can be stored at room temperature or in the fridge.
